Lampe-Gras is a type of food made from boiled goose fat and sugar. It is typically served with sliced almonds, pine nuts, and raisins in a bowl or on slices of bread. The dish was created by Jean Honoré Frédéric Lamothe (1777-1846), chef to Napoleon I who was born in Strasbourg and died in Paris after serving under him for many years as the emperor's personal chef. The dish was named for the street where it originated: Rue du Marché aux Lampe-Gras (Market Street of the Fat Lamp).
