Lampe Gras is a French term for “light grease” which refers to the fat that is used to lard and flavor meat. The term was first used in the Middle Ages when lampes (lamps) were made from animal fats.
Lampe Gras has been a popular dish in France since medieval times, but it has only recently been recognized as a delicacy.
